Initially operated without a sign. Jewish regulars referred to it as Falafel HaZkenim ("The Old Folks"), while Arab regulars called it Falafel Najla after female co-owner Najla Afara.
Passed to Afif Sabit
Having no children, George & Najla entrusted the business in 1984 to Afif Sabit, a loyal lifelong customer who preserved the exact secret recipe and brass-pot frying method.
